Grape variety / vinification
The grapes were harvested in the early cool morning hours to guarantee their natural acidity and delicate aromatic characters. Cold soaking in press for 24 hours at a controlled temperature of 7ºC before gentle pressing. 80% of the juice ferments in stainless steel tanks at a controlled temperature. 20% of the same juice ferments in French oak barrels of 225 ltrs during 18-20 days. To gain complexity and structure the wine ages on its lees for 4 month with a stirring of the lees every 2 weeks. The 2 wines are blended, clarified and light filtrated before bottling. The wine ages for a minimum of 8 months before being released to the market.
Tasting notes
Straw yellow bright color. Intense stringent aromas of lime, peer, pineapple, minerals and a light toasty oak. On the palate ripe tropical fruit, zesty acidity, minerality and a balanced oak flavor. It finishes with a long friendly, balanced acidity.
Food pairing
Goes well with grilled fish, poultry and lam.
